Ayala pioneered the dry styles of Champagne at a time when demi-sec or sweet was the norm. La Perle is sourced only from grand cru vineyards in the Côte des Blancs, the 2012 a majority of Chardonnay with Pinot Noir from Verzy. An engaging and poised mid-palate, citric fruit tempered by notes of lemongrass, flintstone and white pepper; impressive persistence.
