The 1997 Coteaux du Layon Carbonifera contains 459 grams of residual sugar per liter. It is anybody’s guess as to how it will cope with cellaring as there is no empirical basis with which to judge the ageworthiness of such an unusual wine with relatively low alcohol and acidity combined with such stratospheric sugar levels.
